Recipe of the Week

Stuffed Green Peppers with Turkey
A couple of people have asked me to post this recipe, so here ya go.
I'm telling you, these stuffed peppers were dee-lish-us!  And the good news is...not only are they great-tasting, they are easy to make, and good for you.  With only 177 calories per pepper, and 13.2 g of protein.

Here's what you need:

3 green peppers, halved
1/2 cup chopped onion
1 clove garlic
1/2 pound ground turnkey, 93% lean
1 can stewed tomatoes, no salt added
1 cup cooked brown rice
1/2 cup shredded cheddar cheese, 50% light
1 tsp chili powder
pepper
Cook brown rice according to directions on package
Pre-heat oven to 375
In a large skillet, sautee ground turkey, onion, garlic, chili powder and pepper
Remove from heat and add stewed tomatoes and brown rice. 
Mix thoroughly
Halve the green peppers and cook in boiling water for 3-4 minutes until slightly softened. 
Remove from water and place upside down to drain.  (I forgot to take a picture of this step)
Arrange pepper halves in large baking dish and fill with meat mixture
Sprinkle cheese on top of each half and bake at 375 for 15 minutes
And if the little people in your house won't eat green peppers, put some of the mixture in a dish for them...
but be careful!  
As you are taking a picture of it, they might think you are distracted and try to add more cheese
and spill it all over the counter and floor

YUMMY I use to make a recipe that included the same food products..but I cooked cabbage and them rolled the mixture up inside the cabbage roll...I do not usually like cabbage...and I still do not actually eat the cabbage portion but it does give the stuffing a great taste...
